Please feel free to keep the 2nd jar, that 's why I included it.
I'm using the cucumbers for a marinated cuke/tomato/onion salad.
Extra cucumbers are also nice as a breadless sandwich. Slice in half longwise. Scoop out
the seeds. Fill with tuna salad, chicken salad, etc. Very refreshing.
Some of the yellow squash will be made in to a tex-mex sort of casserole to use up left
over cornbread:
steamed squash, Texas caviar, crumbled cornbread, tomatoes, perhaps some cheese
The larger squash will be halved, steamed and the inside scooped out. The scooped squash
will be mixed with sauteed onion & garlic, chopped tomato, some sort of left over
grain, feta cheese and perhaps basil or marjoram. Stuff the squash shells and bake until
hot and the cheese is melting. Broil a few moments to brown the top.
Appreciate the veggies. My garden is not very productive. I'm pretty sure there is an
"all you can eat buffet" sign by it visible only to deer.

Subject: Re: [Gardening] Squash and cucumbers - gone!
Hi fellow gardeners!
The free veggies are now gone. Thanks to everyone who helped them find
new homes. I trust you'll be making some excellent meals with them!
Thanks also to those who took me up on the pickle offer. My lovely wife
Kelly has gently reminded me that I goofed on explaining the pickle jar
deal. I was supposed to ask for TWO pickle jars, only ONE of which would
be returned with pickles. My bad! :) We're in need of extra jars here,
you see.
Everyone who left jars will get their jars back with pickles. Note that
it takes a few days for the pickles to soak in the vinegar flavor.
I'd be curious to hear how you use the cucumbers and squash if you care
to share your favorite recipes!
Cheers
Mark

help yourselves!
